Strawberry Rhubarb Pie
1 pint strawberries, halved (fresh or frozen)
1 egg
1 cup sugar
2 Tbsp. flour
1 9-inch unbaked pie crust
1 tsp. vanilla
3 cups fresh rhubarb, cut into 1/2 inch pieces Topping:
3/4 cup flour
1/3 cup packed brown sugar
1/2 cup quick cooking oats
1/2 cup margarine or butterIn mixing bowl, beat egg, beat in sugar, flour, and vanilla. MIx well. Gently fold in rhubarb and strawberries. Pour into pie shell. For topping, combine flour, brown sugar, and oats in a small bowl. Cut in margarine until crumbly. Sprinkle over fruit. Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees. Bake for 36 minutes or until brown.
