Spicy Asian Chicken Salad in Lettuce Bowls
Serves 4

1/4 cup Rice Wine Vinegar                   
2 Tbsp. Smooth Peanut Butter
1 Tbsp. Ginger, fine dice                   
1 Tbsp. Chili Garlic Sauce
1 Tbsp. Soy Sauce                       
1 Tbsp. Honey
2 tsp. Toasted Sesame Oil                   
1/2 cup Canola Oil
Salt and Pepper to taste

1 cup Bok Choy, sliced thin                   
1 Carrot, shredded
1/4 lb. Snow Peas, julienned               
1/4 cup Scallions, sliced thin
3 cups Grilled Chicken, shredded               
1/2 cup Roasted Peanuts, chopped
Boston Bibb leaves

Whisk together the vinegar, peanut butter, ginger, chili garlic sauce, soy sauce, honey, sesame oil, and canola oil in a medium bowl. Season with salt and pepper, to taste. Combine bok choy, carrots, snow peas, and scallion in a large bowl. Add the dressing and toss to combine.
