Au Gratin Potatoes
Serves 4

1 1/2 lb. Russet Potatoes                   
3 cups Cheese Sauce, hot
1/4 cup Cheddar Cheese, shredded               

    Peel and slice the potatoes 1/8 inch thick. Boil the potatoes until nearly cooked.  Drain the potatoes. In a casserole dish layer the potatoes and the cheese sauce. Sprinkle the top with the cheddar cheese.  Cover with aluminum foil and bake in a preheated 350° oven for 30-40 min or until the potatoes are cooked through. Uncover and cook until the cheese on the top is brown.

 

 


   
Cheese Sauce
Yield: 3 Cups

1 3/4 cups Milk                       
2 Tbsp. Butter
2 Tbsp. Flour                           
6 oz. Cheddar Cheese, chopped
6 oz. Swiss Cheese, chopped                    
2 oz. Parmesan Cheese, shredded
4 oz. Shallots, sliced thin                   
1 tsp. Nutmeg               
Salt & Pepper to taste

    Melt butter in a sauce pan and sauté shallots until they are opaque. Stir in flour and cook for 10 min over medium-low heat. Heat the milk in a separate pan and whip into the flour a little at a time. Over low heat add 1/4 of the cheese into the sauce, stirring constantly until the cheese has melted. When all of the cheese has been incorporated add the spices and serve.
