Baked Apples stuffed with Plums and Dates
Serves 4
4 Cortland Apples
2 Plums
6 Medjool Dates, pitted
1/4 cup Honey
2 Tbsp. Brown Sugar
1/4 cup Sweet White Wine (Riesling)
2 tsp. Cinnamon
2 tsp. Nutmeg
1 tsp. Oil
Pinch Salt
Preheat oven to 350°. Core the apples, be sure
to take out enough of the meat of the apple so you will be able to fit
a good amount of stuffing. You may peel the apple if desired. Peel and
pit the plums, and cut into 1” cubes. Pit the dates and cut
into strips. Heat the oil in a pan and add the fruit. Sautee for 1
minute. Deglaze with the wine. Add the rest of the ingredients and cook
until the sauce thickens. Put the apples into a baking dish. Split the
stuffing between the apples and spoon the sauce over the apples
liberally. Put a 1/2 inch of water in the bottom of the pan and bake
for 20 min. or until the apple is fairly soft. Serve with the Caramel
Cream Sauce.
