Favorite Sauce, Pesto & Salsa Recipes

Balsamic Fig Sauce
Serves 4
1 cup Chicken Stock
3 Tbsp. Balsamic Vinegar
1/4 cup Dried Figs, finely chopped
1 1/2 Tbsp. Honey
1 tsp. Thyme, chopped
1 Tbsp. Onion, minced
2 Tbsp. Butter, chopped
Salt and Pepper to taste
Drain most of the fat from the pan you cooked the meat in
and return to the heat. Add the onion and sauté until opaque.
Add the stock and vinegar and bring to a boil. Use a wooden spoon to
scrape the bits from the bottom of the pan. Reduce the liquid in the
pan to about a half a cup. Add the figs, honey and thyme and reduce by
another 1 to 2 tablespoons. Add the butter and whisk in. Season with
salt and pepper and serve.
