Alligator Pass BBQ Chicken
Serves 4-6

6 Chicken Breasts, bone in                       
1 X BBQ Chicken Marinade
1 X BBQ Chicken Rub                       
1 X BBQ Sauce

    Marinate the chicken for 2-6 hours in the refrigerator. Preheat oven to 350º.  Remove the chicken from the marinade and pat dry with a paper towel. Liberaly apply the rub to the chicken and place on a baking sheet. Place in the oven for 20-30 minutes, depending on how large the chicken is. While the chicken is cooking preheat your grill. If you prefer to cook the chicken on the grill from raw, make sure that the heat is not very high, and keep the chicken on a higher rack. After the chicken is out of the oven, take it to the grill and apply the sauce. Place the chicken on the grill and continue to baste the chicken with the sauce while it finishes cooking. Cook for another 10-15 minutes or untill the chicken is fully cooked. When the chicken is finished remove from the grill and brush with some sauce and serve.



BBQ Chicken Marinade
Yield: 3/4 cup

2 cups Apple Juice                 
2 Tbsp. Worcestershire Sauce        
1/2 Orange, juiced

1/4 cup Brown Sugar           
2 Tbsp. Olive Oil                 
1 Lemon, juiced

2 Tbsp. Apple Cider Vinegar        
2 Tbsp. Salt


    Combine all the ingredients in a saucepan and bring to a boil. Whisk until the sugar and salt dissolve. Let cool.




BBQ Chicken Rub
Yield: 1 1/4 cups

1/4 cup Brown Sugar        
1/4 cup Paprika        
1/4 cup Kosher Salt
3 Tbsp. Black Pepper        
2 tsp. Garlic Powder       
2 tsp. Onion Powder
1 tsp. Cayenne Pepper       
1 tsp. Dried Basil        
1 tsp. Dried Oregano
1 tsp. Dried Thyme

    Combine all ingredients and mix well.




BBQ Chicken Sauce
Yield: 2 1/2 cups

1/2 stick Butter           
1 Large Onion, chopped       
2 Tbsp. Garlic, minced
2 Stalks Celery, chopped       
1 cup Cider Vinegar           
1 tsp. Cinnamon
2 Whole Cloves           
1 Tbsp. Dry Mustard           
1 tsp. Chili Powder
1/2 cup Brown Sugar       
2/3 cup Ketchup           
1 cup Water       

1 Tbsp. Worcestershire Sauce   
Salt and Pepper to taste


    Melt butter in a saucepan; add the onion, celery and minced garlic and sauté until they just begin to brown. Add  vinegar, cinnamon, whole cloves, dry mustard, chili powder, brown sugar and ketchup. Stir, then add water and blend. Bring to a boil, lower heat to simmer, add salt and pepper, and simmer for about 20 to 30 minutes.
