Beef
Roladen
Serves 4
8-2 oz. Thin Sliced Beef Round
4 oz. Onions, sliced
4 oz. Bacon, chopped
2 oz. Dill Pickles, chopped
1 Tbsp. German Mustard
1 qt. Beef Stock
1/4 cup Red Wine
2 tsp. Paprika
2 Bay Leaf
1 Tbsp. Parsley
Flour as needed
Water as needed
Oil as needed
Salt and Pepper to taste
Preheat oven to 350°. Pound out the beef until it is very thin.
Sautee the bacon until it is crisp and remove from the pan. Add the
onion and cook until it is caramelized. Remove the onion from the pan
and add to the bacon. Add the pickles to the onion and bacon and
combine. Spread some mustard on each of the beef fillets. Sprinkle with
paprika. Divide the onion mixture between each of the fillets. Season
with salt and pepper. Roll up each fillet and secure with a toothpick.
Reheat the bacon fat and add oil if necessary. Place each roll into a
baking pan. Add the stock and the bay leaf and bake for 1 hour or until
fully cooked, turning occasionally. Add water to the pan if it is
getting too low. When finished remove the roladens from the pan and
keep warm. Put the stock and the wine into a pan and reduce by 1/4.
Thicken with flour and water. Simmer the gravy for 15 minutes. Slice
the roladens and serve with the gravy.
