Braised Chicken with Tomatoes & Leeks Serves 4
4 Boneless Skinless Chicken Breasts 1/4 cup Onion, diced 1/4 cup Carrots, sliced 2 Leeks, sliced 2 cups Tomatoes, chopped 2 cups Chicken Stock 1 Tbsp. Garlic, sliced 1 Tbsp. Olive Oil 2 tsp. Oregano, chopped 1 Tbsp. Thyme, chopped 1 tsp. Rosemary, chopped 1 Tbsp. Parsley, chopped Salt and Pepper to taste
Heat
the oil in a sauté pan until it shimmers. Add the chicken and cook
until the chicken is well browned. Remove from the pan and add the
onion and carrots and cook until the onion is translucent. Add the
garlic and herbs and sauté for 20 seconds. Add the tomatoes and cook
for 3-5 minutes. Add the chicken back into the pan. Add the chicken
stock and simmer for 20-30 minutes. Remove chicken from the pan and
reduce the sauce if necessary. Add the parsley and serve.
