Braised Pork Chops with Anjou Pears Serves 4
4 Center Cut Pork Chops, bone-in, 1” thick 4 Anjou Pears, peeled & sliced into wedges 1 Red Onion, sliced 1 tsp. Garlic, minced 1 cup Apple Cider 3/4 cup Dry White Wine Olive Oil as needed 1 tsp. Cinnamon 2 tsp. Thyme 2 tsp. Coriander Powder Salt and Pepper to taste
Preheat oven to 350F.
Heat
some olive oil to the smoking point and sauté the onions until they
have caramelized. Add the garlic and sauté for 1 minute. Remove onions
from the pan and place them into a bowl. Add more oil to the pan if
needed and heat to the smoking point again.
Add the pork chops
to the pan and cook them until they are well browned. Remove the pork
from the pan and put with the onions. Reduce heat and deglaze with the
wine. Add the spices and cook for 30 seconds.
Add the pears and the cider and simmer slowly for about 4 minutes or until the pears have softened.
Return
the pork and onions to the pan, moving the pears to the top of the
pork. The liquid should come halfway up the pork, if not add more cider
or wine. Cover and braise in the oven for 15-20 minutes.
Remove from the oven when the pork is cooked.
Reduce the sauce if necessary and serve.
