Favorite Side Dish Recipes

Brazilian Rice
2 Tbsp. Olive Oil
1 Small Onion, finely chopped
1 Clove Garlic, minced
2 cups Rice
1 Roma Tomato, chopped
Boiling water
Heat olive oil in 3-quart saucepan; add onion and
garlic and sauté until golden brown. Add rice and chopped
tomatoes and cook and stir a few minutes to coat rice with oil and cook
tomatoes. When rice begins to brown, add enough boiling water to cover
rice plus an inch above. Cover and boil over low to moderate heat about
30 minutes. All liquid should be absorbed-rice will look dry and loose.
