Cranberry Sweet Potato Soufflé Serves 12
6 sweet potatoes, cooked, peeled, and mashed 2
tablespoons
butter
3 tablespoons fresh orange zest 2 tablespoons freshly squeezed orange juice 1/4 cup heavy cream 1
teaspoon freshly grated
nutmeg
2 cups fresh cranberries, chopped 1/2 cup chopped pecans Salt and White pepper
Preheat
the oven to 350 degrees F. Beat all of the ingredients except for
the cranberries and pecans together in a large bowl until fluffy. Fold
in the cranberries. Place in a greased baking dish and top with
the pecans. Bake for 10 minutes or until the soufflé is warmed through.
