Chicken Fried Rice Serves 4
2 Boneless Skinless Chicken Breasts, cut into strips 4 cups White Rice, cold and 1 day old 1 Large Egg 4 cloves Garlic, minced 1/2 cup Carrots, diced 1 small Onion, diced 2 Scallions, chopped 1/2 cup Soy Sauce 1-2 tsp. Ginger, grated Black Pepper to taste Sesame Oil as needed Vegetable Oil as needed
Fry
chicken pieces in oil until fully cooked or golden brown. Drain on
paper towels and set aside. Beat eggs and make an omelet in the warm
pan. Remove from pan, chop and set aside. Add 2 teaspoon of sesame oil
and 2 teaspoons of vegetable oil to the wok. Stir fry diced onion and
carrot until the onion is translucent, add garlic and scallions and
sauté for 30 seconds. Add a little more oil and then add the rice and
stir fry for a couple minutes. Add soy sauce and spices to the rice
while stir frying. Add the scrambled egg and chicken pieces and mix
well. Heat thoroughly and serve.
