Soy Grilled Chicken & Brie Quesadilla
Serves 4

4 Soy Grilled Chicken Breasts                  
8 oz. Brie
1 cup Caramelized Onion                  
1/2 cup Apple Puree
4 large Tortilla Shells                      
Oil as needed
Butter as needed


   Layout the tortilla shells and spread an even layer of apple puree on the tortillas. Slice the chicken into thin strips. Lay the chicken onto half of each tortilla. Spread the caramelized onion over the chicken. Slice the brie and arrange over the onion.  Fold the quesadilla in half. Heat the oil and butter in a pan. When all of the liquid has cooked out of the butter add the quesadilla to the pan. Cook until golden brown and flip over. Cook until golden brown and remove from the pan. Keep warm in a low oven until all of the quesadillas are cooked. Remove the quesadillas from the oven. Slice each quesadilla 3 times to make 4 pieces. Place on a plate with the pear salsa, garnish and serve.



Soy Grilled Chicken
Serves 4

4 Chicken Breasts                       
1/4 cup Soy Sauce
1 Lemon, juiced                       
1 Tbsp. Garlic
2 Tbsp. Olive Oil                       
Pepper to taste


    Combine all of the ingredients in a bowl and mix well. Add the chicken and marinate for 20 minutes. Remove from the marinade and cook on a medium hot grill until completely cooked.




Apple Puree
Serves 4

3 Granny Smith Apples, peeled & cored          
1/2 cup White Wine
1 Tbsp. Rice Wine Vinegar                  
1/2 tsp. Nutmeg
2 tsp. Lemon Juice                      
Pinch Salt


    Place all of the ingredients in a bowl and simmer until the apples are soft and the wine has almost evaporated. Remover from the stove and puree in a food processor. Refrigerate until needed.


 
 
Pear Salsa
Serves 4

2 Firm Pears, peeled, seeded & chopped          
1 Lime, juiced
2 oz. Red Onion, fine dice                  
1 tsp. Cilantro, chopped
1 tsp. Lime Zest                      
2 tsp. Lemon Zest
1 tsp. Hot Pepper, fine dice
