Grilled Garlic Chicken Hero
Serves 2-6
1 1/2 lb. Chicken Breast, trimmed
10 oz. Provolone Cheese, sliced thin
1 Tomato, sliced thin
1 1/2 cups Caramelized Onion
1/4 cup Basil Pesto
24” French Bread
1/4 cup Olive Oil
2 Tbsp. White Wine
1 Lemon, juiced
1 Tbsp. Garlic
1 tsp. Basil
1 tsp. Oregano
Salt and Pepper to taste
Olives & Toothpicks for garnish
Preheat oven to 350°. In a large bowl combine the oil,
wine, lemon, garlic & spices. Add the chicken and marinate for 30-
45 minutes. Grill the chicken until it is cooked through and let cool.
Slice the chicken about 1/8” thick and set aside. Slice the bread
about 4/5 of the way through and open up. Spread the pesto onto the
bread. Arrange 1/2 of the provolone onto the bread. Spread the onions
on the cheese and then arrange the sliced chicken on the sandwich.
Place a layer of thinly sliced tomato onto the chicken and top with the
remaining provolone. Bake in the oven for about 10 minutes or until the
cheese is melted. Remove from the oven, fold the sandwich together and
secure with toothpicks. Place an olive on each toothpick, slice the
sandwich and serve.
