Favorite Poultry Recipes

Blackened Chicken Quesadillas
Yield: 1 quesadilla
4 oz. Blackened Chicken
2 oz. Roasted Tomatoes, chopped
1 oz. Caramelized Onion
1 1/2 oz. Monterey Jack
1 oz. Roasted Yellow Pepper, sliced
1 1/2 oz. Sharp Cheddar

thin slices Avocado
1 Tbsp. Chipotle Sour Cream
1
Flour Tortilla
2 tsp. Butter
Melt the butter in a large sauté pan over medium heat. Spread a
thin layer of sour cream on the tortilla and place in the pan. Add the
rest of the ingredients onto one half of the tortilla in the following
order: cheese, chicken, onion, avocado, roasted tomato, roasted pepper.
Fold the tortilla over and cook until the tortilla has browned. Flip
the tortilla and cook until the tortilla is well browned and the cheese
has melted. Remove from the pan and cut into slices and serve. |
Blackened Chicken
Serves 4

Chicken Breasts
1 Tbsp. Oil
1
Tbsp. Paprika
1 tsp. Onion Powder
1
tsp. Garlic Powder
1 tsp. Cayenne Pepper
1
tsp. White Pepper
1 tsp. Black Pepper
1
tsp. Salt
1/2 tsp. Thyme
1/2 tsp. Oregano
Mix all of the dry ingredients in a bowl. Heat a cast iron skillet over
high heat. Coat the chicken with a thin layer of oil. Coat with the
spice. When the pan is very hot add the chicken. Cook the chicken until
it is well blackened, turn over and repeat. Finish cooking the chicken
in a 350° until cooked through. |
Chipotle Sour Cream
Yield: 1 cup
1 cup Sour Cream
2 Tbsp. Chipotle Peppers, sliced
2 tsp. Cilantro, minced
1 tsp. Cumin
1 tsp. Turmeric
2 tsp. Salt
2 tsp. Black Pepper
1 tsp. Cyanne Pepper
Mix all ingredients and refrigerate overnight. |
