Favorite Dessert Recipes

Flourless Chocolate Torte Yield: 1 Torte, 10-12 Servings
1 lb. Bittersweet Chocolate 1/2 cup Butter (1 stick) 1
cup Sugar
6 Eggs, separated 1/4 cup Bourbon, or other liqueur 1 tsp. Cinnamon 1/2 cup Cocoa Powder 1 tsp. Cocoa Powder
Preheat oven to 350°. Butter a 9” pan and dust the sides with cocoa.
Line the bottom with parchment. In a medium sauce pan over low heat,
melt the chocolate and butter together. Pour into a large mixing bowl.
Combine the sugar and the egg yolks and whip until smooth. Add into the
chocolate mixture and stir until smooth. Reserve the egg whites. Stir
in the bourbon. Add the cocoa powder and cinnamon. Beat the reserved
egg whites to stiff peaks. Fold the egg whites into the chocolate
mixture until combined. Pour the batter into the prepared pan and bake
in heated oven for 1 hour or until just set. Allow the cake to cool
slightly before removing the sides of the pan. Cool cake completely and
cut cake with a heart shaped cutter. Pour ganache over cake to coat.
Let cool then decorate further if desired and serve.
