Cream of Broccoli Soup with Double Smoked Bacon Serves 6
1 1/4 lbs. Broccoli, cut into florets, stalks trimmed, peeled, and thinly sliced 6 oz. Double Smoked Bacon 2 cups Onions, chopped 2 Tbsp. Roasted Garlic 1 lb. Russet Potatoes, peeled and cubed 1 tsp. Nutmeg 5 cups Chicken Stock 2 cups Light Cream Salt and Pepper to taste 1 Tbsp. Chives, chopped
In a large pot cook the bacon until it is very crisp and remove from the pot. Add the onions and sauté until translucent.
Add
the broccoli, potatoes, nutmeg, and stock and bring to a boil over
moderate heat. Adjust the heat so that the mixture simmers gently,
cover, and cook for 20 minutes or until the broccoli and potatoes are
very tender.
In a food processor, blender or using an immersion
blender, working in batches if necessary, process the mixture until
pureed. Return the puree to a double boiler, stir in the cream, garlic,
salt, and pepper, and gently simmer for 15 minutes. Crumble the
reserved bacon and use as a garnish with the chopped chives. Serve with
roasted garlic crostini.
