Cucumber Salsa
Yield 2 cups

1 cup Cucumber                       
1/4 cup Yellow Tomato, small dice
2 Tbsp. Red Onion, fine dice                   
1 Tbsp. Jalapeno Pepper, minced
2 Tbsp. Lemon Juice                       
Juice of 1/2 Lime
1 Tbsp. Cilantro, chiffanade                   
Salt & Pepper to taste
