Dill & Caper Aioli Yield: 3 Cups

Egg
Yolks
8 oz. Olive Oil 8
oz. Vegetable
Oil
1 tsp. Wine Vinegar 2
tsp. Fresh
Dill
2 tsp. Garlic, Pureed 1-2
tsp. Lemon
Juice
2 tsp. Capers, chopped Salt and Pepper to taste
Whisk together the egg yolks, garlic, vinegar, and lemon juice in a
bowl until foamy. Add the oils in a slow but steady stream, whipping
constantly to form a mayonnaise. Add the rest of the ingredients and
refrigerate immediately.
