Glazed Pan Seared Duck
Serves 4

4 Duck Breasts                       
1/4 Soy Sauce
1 1/2 cups Plum Wine                   
2 tsp. Fresh Ginger, minced
1/4 cup Lemon Juice                       
Vegetable Oil as needed

Combine all of the ingredients in a bowl except for the duck and oil. Add the duck to the marinade and refrigerate for 2 hours.  Remove the duck from the marinade and reserve half. Heat the oil in pan until it shimmers. Sear the duck over medium heat until it is cooked a half a degree under what you would like it to be. Remove the duck from the pan. Add the reserved marinade to the pan and reduce by half. Add the duck back into the pan and cook for 30 seconds. Remove the duck from the pan and let rest 5 min. Slice and serve with the reduced sauce.


Spicy Ramen Noodles
Serves 4

2 cups Ramen Noodles, cooked           
1/2 cup Carrots, julienne
1/4 cup Celery, julienne               
1/4 cup Yellow Peppers, julienne
1/2 cup  Napa Cabbage, shredded           
1/4 cup Scallions, sliced
1 cup Chicken Stock                   
1 Tbsp. Sesame Oil
1 tsp. Fresh Ginger, minced               
1 tsp. Garlic, minced
1 -2 tsp. Shichimi

Heat the oil in a pan. Sautee the vegetables for 1 minute. Add the garlic, ginger and shichimi and sauté for 30 seconds. Add the stock. Add the ramen and cook until the ramen is hot. Add the scallions and serve.


Ginger & Garlic Roasted Chestnuts
Yield: 1 cup

1 cup Chestnuts, roasted & chopped       
2 tsp. Garlic, minced
1 Tbsp. Ginger, minced               
2 tsp. Salt
2 tbsp. Butter

Melt the butter in a sauté pan over low heat. Add the rest of the ingredients and toss until all of the butter has been absorbed.


Shichimi

2 Tbsp. coarsely ground red chili pepper       
1 tsp. roasted orange peel
2 tsp. Lemon Peel, grated               
2 tsp. Black Pepper
1 tsp. black sesame seed               
1 tsp. white sesame seed
1 tsp. ground ginger
