Duchess Potatoes Yield: 6 servings
2 lbs. Potatoes 2 Tbsp. Heavy Cream 2 Tbsp. Butter 1/4 cup Parmesan Cheese, grated 1 Egg, lightly beaten 1 tsp. Paprika 1 tsp. Nutmeg, grated Salt and White Pepper to taste
Peel potatoes, add to pot, cover with water and bring to a boil. Cook until tender.
Preheat oven to 375°.
Mash
potatoes while hot and ensure that there are no lumps. Add butter,
white pepper and cheese to potatoes. Mix thoroughly and taste for
seasoning. Mix in beaten egg ensuring that it is fully incorporated
into the mixture.
Fill a pastry bag with the potato mixture or
snip one bottom-end of the plastic zip bag about ¾-inch across and use
that as a pastry. Pipe the potatoes onto a parchment lined sheet pan.
Sprinkle the top with paprika.
Bake in preheated oven for 30 minutes or until the edges are lightly brown.
