Favorite Beef Recipes

Steak Fajitas
Serves 4
1 lb. Skirt or Sirloin Steak, sliced thin
12 oz. Onion, sliced
12 oz. Green Peppers, sliced
2 Tbsp. Oil
2 Tbsp. Lime Juice
2 tsp. Garlic
1 Jalapeño Pepper, sliced
1 tsp. Cumin
1 tsp. Cilantro
Salt and Pepper to taste
Tortillas, warmed
In a bowl mix together the oil, juice, garlic and
spices. Add the beef and marinate for 30 minutes. Meanwhile heat the
grill to medium high heat. Place the onions and peppers in a aluminum
foil pouch and place on the grill. Grill the beef until it is cooked to
your desired doneness. Remove from the grill and place the beef
and vegetables into separate bowls and serve. Some good accompaniments
would include lettuce, tomatoes, avocados, sour cream, salsa and lime
wedges.
