Gazpacho Garnish
2 Tbsp. Cucumber, peeled, seeded, fine dice 1 Tbsp. Yellow Pepper, fine dice 3 Scallions, cut on the bias 1 Tbsp. Tomato, firm, fine dice 1 tsp. Lemon Peel 1 tsp. Lime Peel 1 tsp. Olive Oil 2 tsp. Parsley, chopped fine 1 tsp. Red Wine Salt and Pepper to taste.
Mix all ingredients in a bowl. Refrigerate until cold. Serve atop Gazpacho.
