Gingerbread Pancakes Yield: 8 Pancakes
1 cup All-Purpose Flour 1 tsp. Unsweetened Cocoa Powder 1 tsp. Powdered Ginger 1 tsp. Cinnamon 1 tsp. Baking Powder 1/4 tsp. Salt 1/4 tsp. Baking Soda 1/8 tsp. Ground Clove 1
large Egg
1/4 cup packed Brown Sugar 2 Tbsp. Vegetable Oil 1 cup Milk 2 Tbsp. Molasses
In
a bowl, mix together the flour, cocoa, ginger, cinnamon, baking powder,
baking soda, salt, and cloves. Set aside. In another bowl, whisk
together eggs, sugar, oil, milk, and molasses. Pour into the dry
ingredients, and mix with a spatula until just combined. Do not over
mix.
Grease a griddle with butter and place over medium heat
until hot. Ladle on a 1/4 cup of batter for each cake. Cook until
bubbles form on the surface of the pancakes, turn and cook until the
other side is lightly browned. Serve.
Apple Topping Yield: 3 Cups
1/2 cup Brown Sugar 2 Tbsp. Butter, melted 2 Tbsp. Cornstarch 3 Granny Smith Apples, peeled, cored and slice 1 cup Apple Juice 1 tsp. Cinnamon 1 tsp. Nutmeg 1/2 tsp Clove, ground
In
a large saucepan, mix together the sugar, butter, and cornstarch. Then
add the other ingredients and cook until the apples are soft and the
mixture is thick. It’s a good idea to start the topping first, and let
it simmer while you make the pancakes.
