Honey and Tangerine Glazed Carrots
Serves 4
1 lb. Carrots
1 Tbsp. Butter
1/2 cup Honey
Juice of 2 Tangerines
1/2 cup Brown Sugar
2 tsp. Cinnamon
1 tsp. Nutmeg
Salt to taste
Peel and slice the carrots on the bias. Boil the
carrots until they are soft, but still al dente. Melt the butter in a
sauce pan. Add the rest of the ingredients and mix well. Bring the
glaze to a boil and reduce to a simmer. Cook until the glaze has
thickened. Add the carrots and stir until the carrots are well coated.
Cook for about 5 minutes over low heat and serve. |
