Favorite Vegetarian Recipes

Grilled Vegetable Primavera Serves 4
1 lb. Cooked Pasta 1 bunch Asparagus, trimmed 1 small Yellow Squash, sliced thick 1 small Zucchini, sliced thick 1 small Red Pepper, large cubes 1/2 cup Red Onion, sliced thick 4 large Portabellas, stemmed & cleaned 4 Plum Tomatoes, quartered Olive Oil as needed for grilling 1/4 cup Olive Oil 2 Tbsp. Garlic, minced Juice
of 1/2
Lemon
1 1/2 oz. White Wine 2 Tbsp. Parsley, chopped 1/4 cup Parmesan Cheese Salt and Pepper to taste
Preheat
grill to medium high. Coat the vegetables with olive oil and grill
until they are slightly charred and al dente. Chop into bite sized
pieced and keep warm. While the vegetables are grilling cook the
pasta. In a large bowl combine the 1/4 cup of oil, garlic, lemon juice,
wine, parsley and cheese. Add the warm pasta and toss well. Add the
vegetables and gently toss. Serve with remaining parmesan cheese.
