Herb Crusted Roast Potatoes
Serves 4

Potatoes
2 Tbsp. Olive Oil
1
tsp. Salt
1 Tbsp. Garlic, minced
1
tsp. Pepper
1 tsp. Paprika
2
tsp. Thyme
1 tsp. Oregano
1
tsp. Basil
1 tsp. Parsley
1
tsp. Cumin
1 tsp. Rosemary
1 large Bay Leaf crushed
1/2 tsp. Crushed Red Pepper
Wash and half the potatoes lengthwise. Mix all of the spices and oil to the consistency of a thick
paste, add more oil if needed. Spread the spice mixture on the potatoes and wrap each one with
aluminum foil. Roast at 350 for 30-45 min or until potatoes are soft.
