Kovrizhka (Honey Cake)
2 1/2 cups Flour
1/2 cup Sugar
2 Egg
1/2 c Honey
1/2 c Slivered Almonds
1 tsp. Cinnamon
1 tsp. Cloves
1 tsp. Baking Soda
pinch of Salt
2-3 Tbsp. Jam
Preheat oven to 350°. In a bowl combine the
eggs, sugar and honey. Beat until the sugar is completely incorporated.
In a separate bowl sift together the dry ingredients. Combine the wet
and the dry ingredients and mix with a wooden spoon to make a dough.
Place into a floured and greased cake pan. Sprinkle the top of the cake
with the almonds and press in slightly. Bake for 15-20 minutes or until
lightly golden brown. Remove from the oven and cool on a wire rack.
When cool slice the cake into two layers. Spread some jam between the
two layers and replace the top. Cut cake into pieces and drizzle with
Lemon Glaze. |
Lemon Glaze
1 1/2 cups Confectioners' Sugar, sifted
2 1/2 Tbsp. Lemon Juice
Mix together the confectioners' sugar and lemon
juice until smooth. (The icing should be thick but still spreadable.)
Pour the icing onto the center of the cake and spread with an offset
spatula. Some the of icing will drip down the sides of the cake. |
