Favorite Soup and Stock Recipes

Jeera Aloo
Serves 4
2 medium Potatoes, skinned, boiled, cubed
1 cup Tomatoes, chopped
1/4 cup Onion, chopped
1 tsp. Cumin Seeds
1
tsp. Ginger, grated
1 tsp. Garlic, minced
1
tsp. Turmeric
1/2 tsp. Chili Powder
1
tsp. Garam Masala
1 tsp. Coriander
1
Tbsp. Oil
1 Tbsp. Cilantro, chopped
Salt to taste
Heat the oil in a sauté pan. Add the cumin seeds, when they
start to crackle add the onion and sauté until golden. Add the
garlic, coriander, garam masala, turmeric and chili powder.
Sauté for 15-20 seconds and add the potatoes. Sautee for two
minutes and add the tomatoes. Reduce heat and cook for 15-20 minutes,
stirring occasionally. Toss in the cilantro and serve.
