Favorite Sauce, Pesto & Salsa Recipes

Lasagna Sauce Serves 4
4
lbs. San Marzano Tomatoes, crushed and
seeded
4 Tbsp. Extra Virgin Olive Oil 1/2 cup Onion, fine dice 2 Tbsp. Garlic, minced 2 Tbsp. Fresh Basil, chiffanade 1 Tbsp. Fresh Oregano, chiffanade 2 large Bay Leaf Sugar if needed Salt and Pepper to taste
Heat the oil in a sauce pot. Sauté the onions until they are opaque.
Add the garlic and the fresh herbs and stir for one minute. Add the
tomatoes and the bay leaf and season with salt and pepper. Simmer over
low heat for two hours. Adjust seasonings. If the sauce is too bitter
add some sugar. Remove from the heat and serve or refrigerate.
