Macaroni and Cheese
Serves 6
1 lb. cooked Pasta (shells or elbows)
3 cups Cheese Sauce, hot
1/2 cup Cheddar Cheese, shredded
1 Tbsp. Unseasoned Breadcrumbs
Preheat oven to 350°. Boil the pasta until it is
just al dente. Drain the pasta and rinse with cold water to stop the
cooking process. Stir together the pasta and the cheese sauce until
completely combined. Place the mixture into a baking dish. Cove the top
with shredded cheese and sprinkle with the bread crumbs. Bake in the
oven for 25-30 minutes. Serve.

Cheese Sauce
Yield: 3 Cups
1
3/4 cups Milk
2 Tbsp. Butter
2
Tbsp. Flour
6 oz. Cheddar Cheese, chopped
6 oz. Swiss Cheese, chopped
2 oz. Parmesan Cheese, shredded
4 oz. Shallots, sliced thin
1 tsp. Nutmeg
Salt & Pepper to taste
Melt butter in a sauce pan and sauté shallots until they are opaque.
Stir in flour and cook for 10 min over medium-low heat. Heat the milk
in a separate pan and whip into the flour a little at a time. Over low
heat add 1/4 of the cheese into the sauce, stirring constantly until
the cheese has melted. When all of the cheese has been incorporated add
the spices and serve. |
