Favorite Vegetarian Recipes

3 Cheese Manicotti
Serves 4
12 Pasta Sheets 5”x6”
2 cups Marinara
2 cups Ricotta
2 cups Mozzarella
1/4 cup Parmesan
1 Tbsp. Garlic, minced
1 tsp Nutmeg
Salt to taste water as needed
Combine the ricotta, parmesan, garlic, nutmeg, salt
and half of the mozzarella in a bowl. Fill a pastry bag with the cheese
mixture. Lay out a pasta sheet on your work surface. Pipe some of the
cheese mixture about 1” from the edge of the sheet. Wet the edge
of the opposite side of the sheet. Roll the manicotti and seal the
edge. Place into a baking pan with a thin layer of sauce. Repeat until
all of the manicotti are made. Cover the manicotti with the rest of the
sauce and top with the remaining mozzarella. Bake at 350° for
45 minutes and serve.
