Favorite Sauce and Pesto Recipes

Caramelized Onion and Apple Chutney
Serves 4
1 medium Onion, sliced
2 Fuji Apples, peeled & chopped
3/4 cup Raisins
Juice of 1 Lemon
1 cup Apple Cider
1/2 cup Cider Vinegar
1/2 cup Sugar
1 Cinnamon Stick
1 tsp. Ginger, grated
4-5 Whole Cloves
1-2 Tbsp. Oil
Salt and Pepper
Heat the oil in a pot to the smoking point. Add the onions
and sauté until the onions are well browned. Add the rest of the
ingredients and simmer over low heat for 1-1/2 hours or until the
liquid has almost evaporated. Serve or refrigerate.
