Peach BBQ Sauce Makes 1 quart

lbs. Peaches
1/4 cup Lemon Juice 2
tsp. Lemon Zest
1/4 cup Canola Oil 1 small Onion, chopped 1 Tbsp. Garlic, minced 3/4 cups Dark Brown Sugar 1/2 cup Cider Vinegar 1/4 cup Bourbon (or water) 1/2 cup Worcestershire Sauce 1/4 cup Tomato Paste 1 Tbsp. Ginger, grated 3-6 Chipotles, minced (optional) Salt and Pepper to taste
Blanch
and peel the peaches. Cut them in half, pit them, and chop the halves
into slices. Toss with the lemon juice and set aside. Heat the oil in a
pan and sauté the onion for 10 minutes. Add the garlic and toss. Add
the peaches, vinegar, brown sugar, and bourbon. Bring to a boil and
then simmer for 30 minutes, uncovered, stirring occasionally. Remove
from the heat and let cool. Puree in a blender or food processor. Pour
back into the pan and add the tomato paste, Worcestershire, ginger,
chili powder, chipotle powder, and salt and pepper. Bring to a boil
over medium-high heat and reduce to medium. Cook for 10 minutes
stirring the entire time. Remove from heat and use. Will keep for 2
weeks.
