Favorite Pork Recipes

Pork Pizzaiola
Serves 4
1 1/2 lbs. Pork Loin, sliced
3 Cups Marinara
1 Green Pepper, sliced
1 Onion, halved and sliced
1 Tbsp. Minced Garlic
1/2 Cup Red Wine
1 Tbsp Basil
1 Tbsp. Oregano
1 tsp. Crushed Red Pepper
1 tsp. Parsley, chopped
Oil as needed
Salt and Pepper to taste
Heat some oil in a sauté pan and sear the
pork loin. Remove from pan and add the onions and peppers. Sautee until
the onion is opaque. Add more oil if needed. Add the garlic and
sauté for a minute. Deglaze with red wine and combine the rest
of the ingredients in the pan. Return the pork to the sauce with any
juices that may have collected on the plate. Simmer until the pork is
cooked or about 1/2 hour. Serve over pasta.
