Favorite Sauce, Pesto & Salsa Recipes

Plum Tomato & Onion Cream
Serves 4
2 Plum Tomatoes, seeded & chopped
4 oz. Onion, sliced
2-3 Cloves Garlic, sliced
1 Tbsp. Fresh Basil, Chiffanade
1/2 cup Heavy Cream
1 Tbsp. Olive Oil
2 Tbsp. White Wine
Salt and Pepper to Taste
Heat the oil in a sauté pan until shimmering
and add the onions. Sauté until well browned and add the garlic.
Cook for 2 minutes and add the tomatoes and wine. Continue to cook over
high heat until the tomatoes are nice and soft. Add the cream and
spices. Cook until the cream has reduced to a saucy consistency. Serve.
