Favorite Sauce and Pesto Recipes

Port Wine Reduction
Serves 4
1 cup Demi-Glace
1/2 cup Ruby Port
2 tsp. Thyme, chopped
1 tsp. Rosemary, chopped
Salt and Pepper to taste
Place the demi-glace and wine in a pot and reduce by half. Add the
spices and simmer for 10 minutes. Adjust seasonings and serve. |
