Favorite Vegetarian Recipes

Pasta Primavera
Serves 4
1 lb. Cooked Pasta
1 cup Broccolini, blanched
1 small Yellow Squash, battonet
1 small Zucchini, battonet
1 small Red Pepper, julienne
1/2 cup Red Onion, sliced thin
1 cup Carrots, blanched & cut on the bias
1 cup Sugar Snap Peas
4 Roasted Tomatoes
2 Tbsp. Olive Oil
1/2 cup Butter
2 Tbsp. Garlic, minced
Juice of 1/2 Lemon
1 1/2 oz. White Wine
2 Tbsp. Parsley, chopped
1/4 cup Parmesan Cheese
Salt and Pepper to taste
Heat the oil and butter in a sauté pan until hot.
Sauté the onions and peppers until the onions are opaque. Add
the rest of the vegetables except the tomatoes and sauté for 3-5
min. Add the lemon, garlic, wine, parsley and 1/2 of the parmesan.
Season with salt and pepper. Either toss or serve over pasta. Serve
with garlic bread. |
