Raspberry Amaretto Cheesecake Serves 8-16

Eggs
1 cup Sugar 4-8 oz. Packages Philadelphia Cream Cheese 1 tsp. Vanilla 1 cup Raspberry Sauce 1/2 cup Amaretto 1 Graham Cracker Crust 1/2 cup Raspberry Neufchatel
Separate
the eggs. Beat the egg yolks and sugar together. Add the cream cheese,
vanilla and amaretto and beat until smooth. Whip the egg whites until
stiff peaks form and fold into the cream cheese mixture. Pour the
raspberry sauce into the batter and cut it in to form streaks of
raspberry through the batter. Do not over mix. It should look marbled.
Pour the batter into a prepared graham cracker crust, in a 15 in.
spring form pan. Bake at 350º for 40-50 min or until a toothpick
inserted into the cake comes out clean. Cool and top with Raspberry
Neufchatel and serve. Use some of the raspberry sauce on the plate to
add some color.
