Roasted Tomatoes
Serves 4
2 Roma Tomatoes
1 Tbsp. Olive Oil
1 tsp. Garlic, minced
1 oz. Parmesan, shredded
Salt and Pepper to taste
Cut away stem ends of the tomato and slice in half
lengthwise. Brush with oil and spread some of the garlic on each tomato
half. Season with salt and pepper. Sprinkle each tomato with shredded
parmesan and bake at 350° for 15-20 min.
