Favorite Appetizer Recipes

Smoked Salmon Latkes
Serves 4
1 lb. Potatoes
2 Tbsp. Breadcrumbs
1 heaping Tbsp. Flour
1 Egg
1/4 cup Onion, minced
Oil as needed
Salt and Pepper to taste
1/4 cup Roast Red Pepper and Dill Cream
1 tsp. Caviar
2-3 oz. Smoked Salmon, thinly sliced
Beat the egg in a bowl and mix in the flour,
breadcrumbs, salt and pepper. Peel and grate the potatoes using the
medium holes on a box grater. As you grate the potatoes put them in a
bowl of cold water so they do not turn color. Drain the potatoes and
place in a large bowl and add the onion. Combine with the egg mixture
and form into patties. Heat the oil in a sauté pan. Add the
latkes to the pan and cook until golden brown on each side. Place
latkes on a pan and place a slice of salmon, a dollop of sour cream on
each and garnish with caviar.
