Favorite Cape Cod Seafood Recipes

Scallops Parmesan Serves 4
1 lb. Large Scallops 1 lb. Pasta, cooked 3 oz. Parmesan, fine shred 1X Grilled Tomato & Onion Sauce 4 oz. Fresh Mozzarella, sliced Olive oil as needed
Preheat
your broiler to medium. Heat about 2 tablespoons of oil in a sauté pan
until it shimmers. Meanwhile place the parmesan on a plate, reserving
about 2 tablespoons, and lightly brush the scallops with some oil, just
enough to get the parmesan to adhere to the scallops. Roll the scallops
in the parmesan and press the cheese onto the scallop. Turn the heat
down to medium low and add the scallops. Sautee the scallops until the
cheese is crisp and golden brown on all sides. When all of the scallops
are cooked place them on a sheet pan and top with grilled tomato and
onion sauce. Place a slice of mozzarella on the scallops,
sprinkle with the reserved parmesan and place under the broiler until
the cheese is melted and golden brown. Serve with pasta tossed with the
remaining sauce.
