Shrimp Scampi Calzone
Serves 4
4-4 oz. Pizza Dough Rounds 1 lb. Large Shrimp, peeled and deveined 1 lb. Mozzarella Cheese 2 cups Ricotta Cheese 1/4 cup Parmesan Cheese, grated 1/4 cup Parmesan Cheese, shredded 2 Tbsp. Garlic, minced 1 Tbsp. Butter 1 Egg beaten with 1 Tbsp. Water
Preheat
oven to 425 degrees F. Place clean pizza stone in oven to preheat. Melt
the butter ina sauté pan and add the shrimp. Sauté for 3-4 minutes and
add the garlic. Sauté for another 2-3 minutes then remove from the heat
and let cool. Dust a clean work surface lightly with flour. Take each
round of dough and flatten with fingers and palms until about 1/8 inch
to 1/4 inch thick and oval shaped. Place 1/2 cup ricotta and 1/4 of the
shrimp in upper part of center of rolled dough. Sprinkle each calzone
with 1/4 of the mozzarella and grated parmesan cheeses. Fold dough to
form a half moon and then seal the edges. Brush with egg wash and
sprinkle with shredded parmesan. Place on stone in oven and cook until
dark golden brown, about 10 to 12 minutes. Remove from oven and serve
immediately.
