Chef Don's Favorite Cape Cod Seafood Recipes

CAPE COD SEAFOOD


Seafood Marinara
Serves 4

8 oz. Shrimp, peeled and deveined               
8 oz. Scallops
12 Mussels, scrubbed                       
12 Clams, scrubbed
3 cups Marinara Sauce                   
1/2 cup White Wine
1 Tbsp. Olive Oil                       
1 lb. Pasta, cooked
2 oz. shaved Parmesan Cheese               
8 Basil Leaves                   


    Simmer the clams in the white wine until they start to open. Remove from the heat and reserve the cooking liquid and the clams in a separate bowl. Return the pan to the heat and add the olive oil. When the oil is hot Add the shrimp, scallops and the mussels and cook for two minutes. Add the marinara, clams and cooking liquid. Simmer until the mussels open. Stir the sauce well to incorporate the juices from the seafood. Put the pasta in a separate pan over medium heat. with 1/4 of the sauce from the first pan and stir together until hot. Place a mound of pasta in the center of each plate. Split up and arrange the seafood over the pasta. Top with the sauce. Garnish with parmesan and the basil. Serve.


 

 


   
Marinara Sauce
Serves 4

2 lbs. San Marzano Tomatoes, crushed and seeded       
2 Tbsp. Extra Virgin Olive Oil

1/4 cup Onion, fine dice                   
1 Tbsp. Garlic, minced

1 Tbsp. Fresh Basil, chiffanade               
2 tsp. Fresh Oregano, chiffanade

1 large Bay Leaf                       
Sugar if needed

Salt and Pepper to taste           


    Heat the oil in a sauce pot. Sauté the onions until they are opaque. Add the garlic and the fresh herbs and stir for one minute. Add the tomatoes and the bay leaf and season with salt and pepper. Simmer over low heat for two hours. Adjust seasonings. If the sauce is too bitter add some sugar. Remove from the heat and serve or refrigerate.
