Mini Garlic Shrimp Skewers
Yield: 16 skewers

large Shrimp, peeled and
deveined
1-2 Tbsp. Chili Garlic Sauce
1
Tbsp. Garlic,
minced
3 Scallions, sliced
Juice
of 1/2 Lemon
2 tsp. Soy Sauce
1
Tbsp. White Wine
Fresh Ground Pepper to taste
16 pieces Roasted Yellow Pepper
16 Pieces Caramelized Onion
In a large bowl mix together all of the ingredients except the shrimp,
pepper and onion. Add the remaining ingredients and refrigerate for 1
hour. Using a long toothpick or small skewer, put a piece of onion, a
shrimp and a piece of pepper, in that order on each skewer. Place the
skewers on a sheet pan. Drizzle with any remaining sauce. Bake at
350° for 15-20 minutes or until the shrimp is almost fully cooked.
Place on a serving platter, garnish and serve.
