Sirloin Steak Tips Po’ Boy
Serves 4
1 lb. Steak Tips, cut bite sized
4-6” French Bread
1 Tbsp. Garlic
2 Tbsp. Scallions
1 Tbsp. Parsley
2 Tbsp. Worcestershire Sauce
1/4 cup Red Wine
1/2 Onion, sliced
1 Red Pepper sliced thin
1 cup Lettuce, shredded
1 Tomato, sliced thin
1/4 cup Cajun Remoulade
Olive Oil as needed
Salt and Pepper to taste
Mix together the wine, worcestershire, garlic,
scallions, parsley, salt and pepper in a bowl. Add the tips and
marinate for two hours. Heat the oil in a pan until very hot and add
the onions and peppers. Cook until caramelized and remove from the pan.
Add more oil if necessary and add the tips. Cook until desired
doneness. Add the onions and peppers back into the pan and combine with
the tips. Slice the French bread almost all the way through so that is
hinged. Spread the remoulade on each half of the roll. Arrange the
Lettuce and tomato on the roll. Add the tips, onions and peppers. Serve
with crisp potato chips.
