Irish Soda Bread
Yield: 1 loaf
2 1/2 cups AP Flour
1/3 cup Sugar
1 tsp. Baking Powder
1 tsp. Salt
1 tsp. Baking Soda
1/2 stick Butter
1 1/2 cups Raisins
1 Tbsp. Caraway Seeds
1 1/4 cups Buttermilk
1 small Egg, slightly beaten
Preheat the oven to 350°. Grease a 9 by 5-inch
bread pan. Soak the raisins in water for 15 to 20 minutes and drain.
Sift together the sifted flour, sugar, baking powder, salt, and baking
soda. Cut in the butter and mix very thoroughly with your hands until
it gets grainy. Stir in raisins and caraway seeds. Add the buttermilk
and egg to the flour mixture. Stir until well moistened. Shape dough
into a loaf and place in the pan. Bake for 1 hour. Test with a
toothpick for doneness. Cool in the pan for 3 to 5 minutes. Transfer to
a wire rack to cool.
