Spaetzel (Spätzle)
Yield: 4 cups

cups Flour
1 tsp. Salt

Eggs
3/4 cup Milk
Stir together the flour and salt. Combine the eggs and milk and stir
into the flour mixture. Gently simmer some water and salt in a large
pot. Using either a spaetzel hex or a colander and a knife make 1/2
inch long pieces and drop them into the water. Cook them for 2-3
minutes and remove them from the water. The spaetzel is done when it
floats on the surface. Toss the spaetzel with some butter and serve.
