Chef Don's Favorite Cape Cod Seafood Recipes

CAPE COD SEAFOOD


Spicy Pan Seared Scallops
Serves 4

1 lb. Scallops
1 Tbsp. Paprika
1 Tsp. Cayenne Pepper
1 tsp. Onion Powder
2 tsp. Garlic Powder
1 tsp. Marjoram
1 tsp. Chervil
2 tsp. Fresh Dill, chopped
Salt and Pepper to taste
Olive Oil as needed

Mix all ingredients except the scallops and oil in bowl. Add oil until you have a thick but viscous paste. Add the scallops and toss. Heat about 1 tbsp of oil in a pan until it reaches the smoking point. Add the scallops and cook until well browned. Turn over and repeat. Cooking time will vary according to how big the scallops are. Remove from the heat and serve.
