Favorite Salads and Dressing Recipes

Spring Greens
Serves 4
2 cups Escarole
1 cup Oak Leaf Lettuce
1 cup Belgian Endive
1 cup Radicchio
1/2 cup Arugula
1/2 cup Frisse
Wash and dry the greens. Tear into bite sized
pieces. Combine in a bowl and serve or cover with a damp paper towel
and place in the refrigerator.
